To begin the brewing Process, malted barley is cracked in our mill
The milled barley (grist) is mixed with hot water in the mash tun, producing a mash.
A sweet, hot liquid called "wort" is lautered out of the mash tun and transferred into the brew kettle where it is brought to a boil. Hops are added at various times to provide bitterness, flavor & aromatic qualities.
After boiling, the wort is cooled down to fermentation temperature by transferring it through the heat exchanger.
The wort is then transferred in to one of the six fermentation vessels. Yeast is added to the cool wort and fermentation begins. The fermenter sits inside our special temperature controlled cooler until its hit its final gravity.
We then keg the beer into 5 gal corney kegs. The beer is than forced carbonated for a few days in our carbonation cooler.
The beer then goes straight over to either of our two kegerators, which house 12 taps.
The beer is now ready to serve and most important for us to drink.
